
Many say that breakfast is the most important meal of the day but I've always been one of those people who just skip it all together. Recently, I have been making more of an effort to get up and eat breakfast, instead of just spending the extra 20 minutes in bed (we've all been there). After deciding to go plant based at the beginning of the year, I needed a quick yet filling meal to start my day, which is when I came across Chia Seed puddings. They're a weird jelly consistency but don't let that put you off - they honestly taste yummy. This is perfect for those rushed mornings because you make it the night before and pop it in the fridge for the morning. So, I thought I'd share the recipe I've been using with you.
INGREDIENTS
- 1 cup unsweetened almond milk (or non-dairy milk of your choice)
- 4 tbsp chia seeds
- 1 tbsp maple syrup (or sweetener of your choice)
- 1 tsp vanilla extract
METHOD
It really is just as simple as mixing all the ingredients together. Leave in the fridge for at least 4 hours, preferably over night. Before eating, pop some fruit on top and enjoy!
